Dans le doc de E-learning, la différence est clairement marquée entre ces deux termes. Je ne crois pas qu'en Francais il y ait deux termes disctincts pour cela, mais à tout hasard, si quelqu'un a un tuyau, un scoop... :)

Explanation:
En français antioxydant est à la fois un nom et un adjectif. Si il est absolument nécessaire de faire une différence, vous pouvez employer « composé oxydant » pour le nom. Mais c'est un peu articificiel. Je reconstruirais plutôt les phrases pour supprimer le besoin d'une différence.
