• Disposable gloves must be used properly and over any bandages, finger cots and finger stalls being worn over unhealed sore, scab, wart, or rash from the wrist down.
• Bandages, finger cots or finger stalls represent a potential physical hazard when worn by a food employee during food preparation. This hazard presents the risk of food products being directly contaminated by the introduction of a foreign object. The risk can be minimized through the use of a single-use glove to cover a bandage, finger cot or finger stall used on the wrist, hand or finger.
• A bandaged food handler may prepare beverages or work at the cash register/drive-thru without gloves unless excluded by client/local requirements.
• Gloves being worn should not be torn or have holes in them.
• Employees should not be wearing two sets of gloves (double gloving) in order to avoid hand washing. Cite if double gloving is observed.
• Unless wearing intact gloves in good repair, an employee handling food may not wear fingernail polish or artificial fingernails when working with food.
o Note: Mitts used as a single use barrier, such as burger mitts/sher-mitts, would not be considered “double-gloving.”
