Explanation:
El ingrediente para las salchichas es grasa subcutánea. El corte de esa parte parece denominarse "lardo", pero también "tocino". Optaría por la segunda opción porque la primera parece ser más bien un corte de la carne, pero si ves las imágenes yo diría que también sirve.
Yo evitaría llamarlo "panceta" porque esta grasa subcutánea procede de la barriga.
"Grasa subcutánea de la espalda del cerdo" sería tal vez demasiado largo, pero la opción más descriptiva.
