Hello,

I am looking for some enlightenment with regard to the above. This an item on a menu, so I can give little other detail.
What is a 'miroir'? My first thought is a glaze in some form but then I thought of 'œuf miroir' and wondered if there was something more to it (I am very possibly overthinking this).

Here is the whole of the text:

Miroir de fruits aux agrumes, croquant feuilleté à la réglisse. « Une salade de fruits revisitée »
