grain

Explanation:
As Catherine mentioned, it is the grain side:

En cuir pleine fleur tanné à l'écorce de chêne - Conçue à partir des techniques de tradition sellier - Le côté pleine fleur du cuir est placé à l'intérieur de la muselière pour en faciliter l'entretien et éviter la prolifération bactérienne. gkpro.fr
Full grain natural leather - Manufactured according to trational leather craftsmanship - The soft side of the leather is placed inside the muzzle to facilitate maintanance and to avoid bacterial proliferation.

"fleur" in French is the upper part of the skin (épiderme), if it has to be kept, it must be perfect as it will be visible, so only the best skins or parts of skins can be used, the prevents to use many parts with folds or other defects

To be more "loquent" you may use "full upper dermis" instead of "upper skin", explanations below:

In fact leather IS dermis, after processing and treatment, but the biological dermis of an animal becomes the industrial product called leather

If these are actual skins of wild animals, part or whole of the epiderm could be kept, like in furs?

Notes to answerer
Asker: Thank you, but in this case, (wild animal skins) the defects are what is prized (bite marks, scars, suggestive of life in the wild) I'm wondering about the 'dermis'????

Asker: Full upper dermis seems to hit the right note! Thank you so much!!!!

Asker: Really its hard to tell. The text starts off on craftsman made furniture (in Africa) and then out of the blue mentions 'trophées et massacres' and then gets very mysterious about ANY skins your heart desires - I was feeling quite ill be the end of it...
