The mining terms dictionaries above also define

"Galería - Gallery : drift"

So, I would say that 'cajas de las galerías' means (the rock of the) gallery walls or drift walls.
In the Diccionario Técnico de Mineros y Petroleros it also lists

"safety bay (mining) - refugio, nicho de seguridad, frontón hecho en las cajas de las galerías
con el propósito de proteger al personal, que transita por una galería por la cual circulan
vehículos"

which would seem to back this up.

There is a distinction between drift and gallery in English -
"Drift - A horizontal passage underground. A drift follows the vein, as distinguished from a crosscut that intersects it, or a level or gallery, which may do either."
