José sale a la redonda tambaleando por las escaleras, con la Virgen en la mano. El peón le entrega el caballo y José la Virgen.

From the context, it's clearly a place in the track: the jockey, José, is walking from the locker room to mount his horse.

The pre-parade ring and paddock

  -> Yes but it is really more known as the parade ring or main paddock or horse paddock, not just a generic ring or paddock , Parade ring is the preferred term and has more google hits than horse paddock, there are also paddocks for hens, etc
