I am looking for the spanish translation of "mounding plant", not the way of planting but the shape of a plant.

It is the way the plant grows.

Encontré una referencia en el KOG del inglés al francés, donde se define a "mounding plant" como "plante couvre-sol":

También ví este glosario, donde el equivalente castellano de "couvre-sol" es "Cubierta vegetal; plantas de poca altura usadas para cubrir una extensión de tierra":

En la misma referencia, el equivalent en inglés de "couvre-sol" es "groundcover".

"When you say mounding, the plants that come to mind to me are mostly deciduous like hostas, heucheras, cimafuga etc. or hydrangeas, spireas, St. John's wort, deutzia, etc"
Maybe if you find any of those in Spanish and find a description, you´ll find the right word for mounding.
I thought it meant "trepadora" but cannot find a reliable source to check it.

planta que forma mata

I think this expression takes care of the round shape, since I cannot recall an instance of a "mata" not being round.
