Я в растерянности. Во-первых, квас, он brewed? Во-вторых, "по рецепту" -- он-то приготовлен сейчас, сам рецепт давнишний.

Brewed is the first word that comes to my mind. Even though there is no heat involved, the fermentation is what makes it brewed. But if there is any doubt, "prepared" would be fine as well.

So, is kvass really brewed? Unlike beer, kvass doesn't need any thermal processing. As far as I know, it requires fermentation process only.

Транскрипция кваса различная - с одной s, с двумя, иногда даже quass.

Мне кажется, квас brewed; по словарям он made, что безопаснее :-)

Я не уверен, что following передает "по рецепту" - можно подумать, что варят квас, потому что с монахов обезьянничают. Впрочем, может вы и правы...
