: The word "work" here is a noun referring to the (amount of) work to be done - not a verb referring to the workers working. Nothing to do with overtime, or working less. Instead, it means doing fewer things than the originally specified "work."

: You're right that "work" is a noun here - but, for the sake of parallelism and formality, the phrases "additional works" and "less work" do not combine well. Something like "cancelled"/"omitted"/"reduced" would be better than "less."

'Trabalhos a mais' and 'trabalhos a menos' are not (as other answerers assume) about how long the employees work, but about works (tasks, parts of the contract) that are added to or subtracted from the original schedule of works at the request of the customer, with the contract price adjusted up or down accordingly - as I think you understand.
I don't know if there is a 'consecrated' English term for 'trabalhos a menos', though I have certainly seen 'additional works' for 'trabalhos a mais'. So I've made some suggestions that I hope will help.
