I am assuming this is the "zanguango" or "zanguango manchego", which seems to be a kind of "pesto" made with cod, potatoes, dried tomatoes and peppers, walnuts, garlic and olive oil.

My priority was to indicate a few of the ingredients of the dish, to try to get around the language barrier in case the waiters don't have the necessary level in English to be able to answer patron's questions. The glossary entry is what I put. Zanguango Salad

Regional restaurants often have dishes with odd names like this. Leaving it untouched is better than having to reel off the list of ingredients, or your menu will look look like a recipe book.

Zanguango salad, and anybody who wants to know what's in it can ask the waiter - or be very bold and just order it.
