Stepped は Shouldered と同じで「段の付いた」という意味で使用されていると思います。大きさの違うPancakeが同心状に重なった、ちょうどウェディングケーキ状になったものかと推定しますが、推定の域を出ません。

ステップパンケーキ
I cannot find the term nanopancake as "ナノパンケーキ" but I would suspect that it should be translated that way. I believe that making scientific terms universal is very helpful.
In the same vein, I think that stepped pancakes can be ステップパンケーキ because the word ステップ is well understood in the Japanese language and the imagery of ステップ is clearly " 段. "
