I'm struggling with a particular legal expression. In a text from a lawyer acting as bailiff and referring to his serving a bailiff's notification, the final term in the paragraph is "en van na te melden producties latende aan:" and it's this term I'm struggling with.

'Latend(e)' is a gerund, like 'doend(e), meaning that he has performed his document (exploot), has delivered a (true) copy of it and of all the exhibits (producties) which will be included in the document (na te melden = still to be mentioned). I think 'aan:...' means he has left his things to someone with a name, but that should be in your document.
