El producto que degustamos hoy es una base de 2009, es un vino que hoy lleva más de 30 meses envejeciendo con levaduras, es un ensamblaje con un 83 % de Chardonnay, un 12 % de Macabeo y un 5 % de Pinot noir, es un vino que tiene una fineza de burbuja increíble, se puede apreciar el cordón, un magnifico cordón que envuelve perfectamente la periferia del vaso, un cordón de espuma muy fina.

I found a reference to this phenomenon in Wine Tasting by Ronald S. Jackson, Elsevier 2002 p191: 'and the ring of bubbles (cordon de mousse) around the edge of the glass.' The cordon de mousse is the French expression.
