From the context, the sense of "¡Cuál no nos vamos quedando cuando vimos para qué los querían, ve…!" is that we were very surprised and perhaps shocked when we saw what they wanted them for. I think an idiomatic expression that could be used in this situation in English is "Imagine our faces when we saw...!". Variants are "Just imagine our faces...", "You can imagine our faces..." "Can you imagine our faces...". It could be any of these.

An alternative might be "Imagine how we felt". This would tend to imply that it was an unpleasant shock for us, whereas "Imagine our faces" would imply that we were very surprised, amazed.
