I can't find this term any where, not even in LexiVin : is it simply a literal translation?


La vinification est traditionnelle dans un chai complètement rénové, avec un matériel de haute technicité Les raisins après égrappage sont mis avec le plus grand soin en cuve, où ils vont subir une macération pré fermentaire à froid de 4 à 5 jours avant de laisser aller la fermentation, suivie d’une macération conduite ‘’  le verre à la main ‘’  pour exprimer au mieux toute la richesse des raisins.

Yes, it's just a jocular way of saying 'tasting as the winemeking process progresses' — so you can see how it's developing and when it's ready...

But it is the most technical stage in the process ;-) Consumption is after all the whole object...

Of course, I'm only joking — but clearly, at this crucial stage in the winemaking, only the human palate will do.

agree Tony M : With 'glass in hand' (not 'glasses', which would suggest spectacles) — but not 'drinks', this is not about enjoying a drink, but very serious wine-tasting (with spitting-out)
