The other interpretation is what Mónica suggests, as in, while it produces dairy products, does not produce cheese... / It could also be that while the cow manure produced is uncontaminated (positive feature... organic cow manure is awesome for growing tomatoes, and I can attest to that first hand, having eaten the best tomatoes of my life fertilized with cow manure...) the "outpoint" is that produces "off cheese", i.e., "bad cheese" that cannot be sold... HOWEVER, there is "good" "off-cheese". As a matter of fact, I have a friend who LOVES "off-cheese", specially, as he puts it, "if the cheese is about to walk"... (so alive with bacteria and "living things" is the beast...) he will eat it and enjoy it dearly... And I must say he is pretty healthy... At any rate, this last interpretation, in Andy's line on the Cabrales, may be the correct one...

The only thing I can think of is that the original itself is a (rather poor) translation from some other language: in English "the production of dairy products" would just be "dairy produce" surely, and perhaps "off cheese" should have been translated as "matured cheese"?

I've no idea what it means but I really don't understand how one of a company's lines of business can be described as producing "queso en mal estado" o "podrido". Simply doesn't make sense.

"Cabrales" e.g., is traditionally wrapped in bay leaves and buried in dung for several months (and is delicious, BTW), but no Asturian would tolerate it being called "podrido"
I'd almost be inclined to go with Mónica and say that it's a term used to indicate that cheese isn't one of the dairy products they produce (valga la redundancia).

queso rancio / (queso pasado / queso en mal estado)

Hay varias formas correctas e idiomáticas de expresarlo.

La mejor "colocación" me parece que es "rancio" (Moliner nos da: Aplicado a comidas, *viejo: ‘Vino rancio. Tocino rancio. Aceite rancio’.)

Aunque coloquialmente se usa "pasado" o "malo" para indicar que está "en mal estado".

De acuerdo con la "discussion", la otra interpretación es que se trate de "quesos fermentados" (como podrían ser el "azul americano" o el "Roquefort"... estos que tienen bacterias creciendo por todos lados...

BJALO. Queso fresco búlgaro, madurado durante seis meses en salmuera. Antiguamente se hacía de leche de cabra y oveja, pero ahora se utiliza leche de vaca. Es parecido al requesón y de gusto algo agrio.

queso podrido

No sé si a esto se refieran aquí (y el contexto es bastante raro, "cow manure: uncontaminated"?), pero "off cheese" o "gone-off cheese" es una frase idiomática que significa queso que no sirve.

The could well mean whey, which is a by-product left over in cheesemaking.
