"Live (wire) in", il s'agit d'un fil conducteur mais je ne comprends pas le sens apporté par "in".

Here, 'live' opposes 'neutral', and indicates the 'phase' conductor.

This is made clear in the table on p6 of the instruction manual in your link.

Asker's doc says:

"COM - Live in
NO - Switched output"

That means to say that the 'COM' connection of the relay is connected to the incoming live feed, and the 'NO' (= normally open) contact feeds the switched power to the boiler etc.

At the actual thermostat itself, the contacts are 'floating' and 'volts free' — but when connected up in the designed configuration, the 'live in' brings the power to the 'COMMON' relay contact, and when the thermostat turns the relay on, the 'N/O' contact closes, which feeds the power out to turn the boiler on.

This particualr 'live in' is an input from the point of view of the thermostat — but it actually arrives from the boiler (which is the only thing that is actually connected to the mains!) — so from the point of view of the boiler, it is a 'live out'; then it is fed back into the boiler as a 'switched live', to make it come on only when the thermostat tells it to.

The thermostat itself is 'volts free' — that means it does not intrinsically feed power to anything: it requires a feed of 'live in' in order to be able to feed it back out again, suitably switched.
