'patatas encebolladas' appears as a side dish through the menu. I understand what it means but was hoping someone had a more sophisticated way of saying 'potatoes cooked with onions'.

It will depend. In the example above I would say "potatoes stewed with onions and octopus in a red pesto sauce".
