fridge (?)
I would think they refer to the "fridge"...

Yes, indeed. But if you work at the kitchen, no matter how hot the area can be, you always have a fridge, and a freezer, in many cases.
As a matter of fact, having worked at kitchens and helping chefs, there is always more than a fridge. You have a "working fridge", and a big fridge, etc...
And it is key to keep the fridges as clean an hygienic as possible!!! ;-)

You're welcome.
N.B.: Even if they use "refrigerador" along the text, I tend to believe they refer here not to "freezer" but to the "fridge". Keeping a "freezer" clean and hygienic, is quite a task. I have done such cleaning, and you have to be pretty energetic, and very well dressed...
If you can double check with the client, maybe you can get a confirmation, but as Neilmac notes "fritzes" is a mispronunciation or mis-spelling for "fridge".
If you have a "small" working fridge, you will probably have a freezer (in it), but even then you would refer to it as "fridge".

Note from asker:
I thought that at first, but then noted that it refers to equipment and so in the hot area of the kitchen |
Then I gues it could be freezer, because they use refrigerador along the text. Thank you |
The thing is that the document consists of tables, and the one listing the areas to clean, includes both refrigerator and fritze. Anyway, your answer was helpful. Thank you |

On the basis of that, seems freezer is a possibility.

: Good reference. But "frizar" does not include the "t", which to me is the "clincher" in this context. In addition to the "reality" of a kitchen. The second one seems to refer clearly to "fridge" ;-)
