I think she means the way the pieces are now set out depicts the messages the art is trying to put across - in other words the "script" underlying her art. (The set-up of the installations is itself meaningful, as are the installations themselves, that's why ...el concepto del guión de montaje Y la instalación).
So you could translate it along the lines of:

Based on the context she talks about putting together images and paintings, some others defined it as the artistic script. Usually filmmakers before the mise-en-scène and filming the movie, they use a storyboard which is a graphic organizer of how the movie is going to play out, it usually drawn with images to portray the sequence of the movie, and so they usually draw the different kind of shots and what they want to have on screen. However, it may be the mise-en-scène.

I don't think "screenplay", the cinematic term, is appropriate if there are no screens involved; "script" seems to be more suitable.

I'm really just posting this reference to avoid disagreeing or pooh-poohing any of the answers posted so far. In my take, "montaje" would be as in the fourth definition listed: "any combination of disparate elements that forms or is felt to form a unified whole, single image, etc.", in other words the putting together (assembly) of the installation.
