I think she means the way the pieces are now set out depicts the messages the art is trying to put across - in other words the "script" underlying her art. (The set-up of the installations is itself meaningful, as are the installations themselves, that's why ...el concepto del guión de montaje Y la instalación).

Usually filmmakers before the mise-en-scène and filming the movie, they use a storyboard which is a graphic organizer of how the movie is going to play out, it usually drawn with images to portray the sequence of the movie, and so they usually draw the different kind of shots and what they want to have on screen. However, it may be the mise-en-scène.

In my take, "montaje" would be as in the fourth definition listed: "any combination of disparate elements that forms or is felt to form a unified whole, single image, etc.", in other words the putting together (assembly) of the installation.
