I think the word is wrong in Spanish. I'd say they are speaking about "pianismo" (Técnica o estilo de interpretación del piano, o de composición de obras para este instrumento, que resultan propios de un determinado autor, de un intérprete o de una época).

No estoy seguro cómo expresarlo en inglés, si manteniendo el término original en italiano (panismo) o si utilizando un concepto equivalente -que no se me ocurre.
Efectivamente, panismo es original italiano. Ver aquí por ejemplo;

En el contexto dado, no obstante, y como aclarado por Helena en Discussion, en este caso se trata de un typo (pianismo) y no de una curiosa referencia a un hermoso término italiano ;)

The sonata opens with an exceptionally slow introduction, in which emphasis is put on the equality of the two instruments, kept throughout the entire work. The second movement has a melodic feeling of adagio, which was the tempo written down by Mozart at first, but then crossed out and marked Andante. In the development section there are bold chromatic modulations. The final movement returns to the playful mood of the first, but even so happens to be a very sophisticated Rondo.
