"Veal Olives | Bayside, NY Patch

veal olives from patch.com
Feb 21, 2011 - In fact, Veal Olives gets its name from the fact that the veal scaloppine looks a lot like a large olive once it's rolled and stuffed. Because of the high cost of veal in colonial times, this dish would have only appeared in the cookbooks of the elite, like the Washingtons."

agree Tony M : Just 'paupiettes de veau' alone is sufficient -- they are by definition going to be 'farcies'.

agree John ANTHONY : Yes ! Tony is right also, a paupiette is "farcie" by definition...

Roulade de Veau

C’est le nom d’un plat! D’une préparation à base de de fine tranche de veau. Je ne crois pas qu’il y ait de traduction à proprement parlé donc je propose celle-ci.

It’s a tricky one because   « Veal olives » do not exist as such in French cuisine. According to the link below it does not look like « paupiettes » at all, not are paupiettes ever filled with seafood!! But It is true that « roulades de veau » is a dish that does exist in French cuisine and it’s not that either. So I would suggest « roulades » OR « paupiettes » but with an add-on like « à la Washington » !

disagree Tony M : A 'roulade' is something different; 'paupiette' is the standard translation for this dish

disagree Sara Massons : these are "paupiettes" http://www.cookitsimply.com/recipe-0010-01549s0.html
