I considered finding a way to use"voluntary" or "recovery of independence", but is there a medical term for this post anaesthesia recovery function?

"la completa autonomia" is typical Italian medspeak. It means, as you yourself wrote, a "recovery of independence" on the part of the patient as opposed to being under anesthetic. Being a patient information leaflet, I would be inclined to use an informal tone.
So the whole sentence might go something like this (just a suggestion):
"At the end of the procedure, the anesthetist will bring you back to consciousness in complete safety, allowing you to regain control of your muscles and your breathing, and letting you get back on your feet."
You could even use "wake you up" instead of "bring you back to consciousness".
