At the end of fermentation the yeast is harvested and washed using centrifugal separators, then chilled to < 4°C. The yeast is now a light cream coloured suspension at ~ 20% solids referred to as cream yeast.

Flüssighefe

Reinzuchthefen, wie sie in der Önologie oft verwendet werden, sind in der Form von Trockenhefen oder Flüssighefen erhältlich. Die Flüssighefen sind dabei nicht wirklich "flüssig", sondern haben eben eine rahmige Konsistenz, daher cream. Siehe Link...
