Primero la definición del término:

rolling forecast = consumer´s delivery schedule which is updated regularily (for example: every two weeks) within a specified period of time (for example three months).

See:

In November 1993, the Company signed a purchase contract with Carl Zeiss,
a major supplier of ophthalmic products. The contract provides a twelve month rolling forecast of anticipated usage, although Carl Zeiss is only obligated to purchase no more than the full quantity specified in the first three months of the most current rolling forecast. The first month is fixed, the second month may vary by as much as 20%, the third month may vary by as much as 40% and the fourth through the twelfth months are only forecasts.

(It can also reffer to the budget planning which is not the case here.)

rolling (here) = continuo

Para no contagiar el idioma:

1. prónostico (de demanda) continuo

2. proyección continua de demanda

3. demanda proyectada

Esto es un término estándar. (Búsqueda Google).

Por ejemplo:
