In the English version of the website the meaning of plaquetado is plating, but i could not find any results in Google relating to manufacturing process.

It refers to the placing of the trays of fish in plate freezers (possibly where the 'plaqueado' term has originated from). I can't find an official term for this in English, anything I have found just gives a description of the process rather than a specific term, so the 'plating' in your English version may well be suitable.
