Yes 'ahoj' means 'hello', as William says. However, if starting a formal letter without knowing the person's name use 'Dobrý den' - good day. Presumably you don't want Dear Sir/Dear Madam - Váený pane/ Váená paní - respectively. Ahoj is too informal.

Milý XY / Milá XY !
It is more polite to start a letter with:
Milý XY! - if the addressee is a man,
or:
Milá XY! - if the addressee is a woman.
e.g. :
if you write a letter to Pavel:
Milý Pavle!
if you write a letter to Jana:
Milá Jano!
"Ahoj" is also possible, but this salution is more matey, pally.
