@William / European market Please let me have a little rant (not at you now William, but at the market in general!!).
We organic producers have to spend a great deal of money on being allowed to use the organic rating - there is an amount per animal slaughtered, cost of inspections, higher quality controls, independent laboratory tests on all organic feed used, the years that the land has to be certified before you can even let the animals graze on it etc etc... ;-)
Pretty sure I've already had a rant on Proz on the subject of what Ibérico/Bellota/Recebo is in reality - if I can find it I'll put up the link! Thanks all, rant over.

secreto iberico I wouldn't say it was "quality" either, its a fatty part of the pig between the top of the head and is more of a "delicacy" (which means don't it eat too often or your arteries will seize up)

Just to clarify something here... I'm proposing the possible addition of free-range or acorn-fed (not organic, I accept thats too specific a term) to highlight that this is high-end meat, not standard mass-produced pork. Most English speakers who are not familiar with Spain /productos ibéricos wont be familiar with the animal so the additions to Iberian/Iberico highlight the meat quality.

As you say, you should leave the name of the cut in Spanish, as this could is particular to Spain.

As for a description, I found this nice one (and adapted it slightly) from the website below.

One thing I would say is that if it is indeed a highly marbled cut (I don't actually know as I have never seen it), then "pork fillet" could be misleading as to me this give the impression of a cut that is free from fat.

organic / acorn-fed Iberian pork secreto

As the cut doesn't exist in the English-speaking pork world, I'd leave it as it is. Translating it is misleading (there isnt any secret really) and reminds me of that 60s/70s fad for calling foods Chicken etc "Surprise". Leaving it in Spanish (maybe in italics) adds to the exotic-ness and makes it sound appealing/appetising, the aim of a menu translation

The use of "organic" and or "acorn-fed" is a further way of underlining the quality of the meat, that this is a cut above your average pork chop :o)
