CONTEXTO: tasting description of wines. Here, a brief background, before the details of tbe aromas etc. My problem is the "en dulce".
"Para que no falte la nota de dulzor nos trasladamos al Sur, a la DO Montilla-Moriles (Córdoba), con la variedad Pedro Ximénez y su vinificación en dulce. Cabe destacar la artesanía con que se obtiene este vino del sol, a partir de la variedad de uvas blancas Pedro Ximénez pasificadas en la pasera del lagar, sobre unos capachos de esparto."

when the grapes are vinified sweet
The clue is in the word 'pasificadas' which means leaving the grapes on the vine longer, also known as rasining and late harvesting.
There are several methods of producing a sweet wine, too complicated to go into here. But the method being referred to here is this.

thanks, Carol. I think the fact the text says the grapes are "pasificadas" suggests it is by leaving them longer on the vine.
