In the context, you need a literal definition. If this was part of the recipe, you would say charcoal-grilled, char-grilled or grilled over charcoal.

I'm trying to post some references but having trouble doing so on my phone!

agree Charles Davis : Isn't it "roasted" (roast chicken is chicken that has been roasted)? // I'm not sure either, to be honest, but yes, I think they're both right. No question about the agree! Just being pernickety; can't help it.

Not sure, actually, Charles. I think they're alternative past participles, and that we use 'roast' adjectivally, 'roasted' as the normal verb. Thanks for agree anyway!/So I suppose I'm saying either would do.

agree neilmac : In my experience, it is usually served cold, so "roast" and "embers" could be misleading if it was on a menu...

Rescoldo

Just a note, in case you can use it. A couple of years ago, I translated a book on Argentine cuisine from English into Spanish (the chef is Argentine but it was written by an American). First they gave an explanation of what it was ("Rescoldo is a method of cooking by covering ingredients with hot embers and warm ashes") and then for the names of the dishes they just said, for instance, "Rescoldo Eggplants", "Rescoldo Vegetable Plate", and so on.
